Pumpkin Blondies

These pumpkin blondies have a chewy yet cakey texture, with a lightly spiced flavor from the addition of pumpkin pie spices.

These blondies are made with pumpkin puree which adds a pretty pumpkin color, along with a delicious pumpkin flavor. Chocolate chips finish the blondies off perfectly.

Ingredients You’ll Need:

Butter: Unsalted butter is used in this recipe.
Brown sugar: The brown sugar can be substituted with granulated sugar, or a combination of brown sugar and granulated sugar.
Pumpkin puree: Use homemade pumpkin puree, or a canned store-bought pumpkin puree. Not to be confused with pumpkin pie mix.
Egg: A large egg is used in this recipe.
Vanilla extract: The vanilla extract can be substituted with 1 teaspoon of vanilla essence.
Salt: The amount of salt added can be increased or decreased to suit personal tastes.
All-purpose flour: Standard all-purpose flour is used in this recipe.
Pumpkin pie spice: Use a store-bought pumpkin pie spice mix, or use your own homemade version.
Baking powder: Not to be confused with baking soda.
Semi-sweet chocolate chips: The chocolate chips can be substituted with any other variety of chocolate chips, or omitted all together.

How To Make Pumpkin Blondies

1. Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper and set aside.

2. Add the melted butter and brown sugar to a large mixing bowl. Mix until well combined. Add the pumpkin puree, egg, vanilla extract and salt to the mixing bowl, and mix once again until well combined.

3. Add the flour, pumpkin pie spice and baking powder. Mix until just combined. Fold in the chocolate chips.

4. Transfer the batter to the prepared baking pan. Bake for 35 minutes, or until just cooked through. Allow to cool completely in the tin before slicing into squares.

Storage

Store these blondies in an airtight container at room temperature for up to 3 days. These blondies are suitable for freezing. Freeze in an airtight container for up to 3 months. Thaw at room temperature before enjoying.

Notes

  • The baking pan can be sprayed with non-stick cooking spray instead of lining with parchment paper.
  • The center of the blondie should still be slightly soft once baked. An inserted skewer or toothpick should come out mostly clean.
  • Extra chocolate chips can be sprinkled over the batter just before baking.
