Ingredients You’ll Need:
- 2 smaller Granny Smith apples, peeled, cored, and diced into small bite-sized pieces
- 1 Honeycrisp apple, peeled, cored, and diced into small bite-sized pieces
- 3 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter
How to Make Apple Hand Pies:
Make the Filling
1. In a medium saucepan melt the butter over medium heat. Add the diced apples (Granny Smith and Honeycrisp), granulated sugar, brown sugar, cinnamon, and lemon juice to the saucepan.
2. Cook for 5-7 minutes, stirring occasionally, until the apples are slightly softened. Remove from the heat and allow the filling to cool.
Assemble the Hand Pies
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. Roll out your store-bought pie crust and cut out circles about 4-5 inches in diameter (use a cookie cutter or even the rim of a glass).
3. Place a spoonful of the apple filling in the center of one dough circle. Be careful not to overfill. Top with another dough circle and press the edges gently to seal. Use a fork to crimp the edges.
