For the Filling
- 2 smaller Granny Smith apples peeled, cored, and diced into small bite-sized pieces
- 1 Honeycrisp apple peeled, cored, and diced into small bite-sized pieces
- 3 Tbsp granulated sugar
- 1 Tbsp brown sugar
- 1 tsp ground cinnamon
- 1 Tbsp lemon juice
- 1 Tbsp butter
For the Crust
- 2 sheets of store-bought pie crust
- 1 egg beaten (for egg wash)
For the Glaze
- 1 cup powdered sugar
- 1-2 Tbsp milk
- ¼ tsp vanilla extract
Make the Filling
In a medium saucepan melt the butter over medium heat.
Add the diced apples (Granny Smith and Honeycrisp), granulated sugar, brown sugar, cinnamon, and lemon juice to the saucepan.
Cook for 5-7 minutes, stirring occasionally, until the apples are slightly softened.
Remove from the heat and allow the filling to cool.
Assemble the Hand Pies
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Roll out your store-bought pie crust and cut out circles about 4-5 inches in diameter (use a cookie cutter or even the rim of a glass).
Place a spoonful of the apple filling in the center of one dough circle. Be careful not to overfill.
Top with another dough circle and press the edges gently to seal. Use a fork to crimp the edges.
Brush the tops with beaten egg to achieve that golden-brown finish.
Cut two small slits on top of each pie with a knife. This allows steam to escape while they bake.
Bake the Pies
Arrange your hand pies on the prepared baking sheet.
Bake for 20-25 minutes, or until they’re golden brown.
Remove from the oven and allow them to cool slightly.
Prepare the Glaze
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and drizzle-ready.
Once the pies have cooled, drizzle the glaze over the tops.
Give the glaze a few minutes to set before serving.
Storage:
Place the pies in an airtight container and store in the refrigerator for up to 5 days.
