A twist on the classic Waldorf salad, this Waldorf chicken salad is a delicious blend of apples, grapes, celery, walnuts and shredded chicken.

Waldorf Chicken Salad

The salad is smothered in a creamy sweet mayonnaise and lemon juice dressing. This salad is simple, fresh and always a favorite.

Ingredients You’ll Need

Cooked chicken: Use a store-bought rotisserie chicken, or home-cooked chicken. Shred the chicken before making this salad.

Red apples: Pink lady apples were used in this salad, however any variety of apples can be used. The skin was left on the apples, however the apples could be peeled before dicing if preferred.

Grapes: While white grapes were used in this salad, red grapes could instead be used. Raisins could be also used in place of the grapes.

Celery: The fresh celery gives freshness and texture to the salad, however it could be omitted if preferred.

Walnuts: The walnuts could be substituted with roughly chopped pecans.

Lettuce leaves: Use your preferred variety of lettuce, or a combination of mixed lettuce leaves.

Mayonnaise: Use a good quality whole-egg mayonnaise for best results. The mayonnaise could be substituted with unsweetened plain yogurt, or a combination of mayonnaise and yoghurt.

Lemon juice: The dressing tastes best when made with freshly squeezed lemon juice, however bottled lemon juice can be used if fresh lemons are not available.

Granulated sugar: The granulated sugar adds a hint of sweetness to the dressing, however this could be omitted if preferred.

Salt and pepper: Season the dressing to suit personal tastes with salt and pepper.

How to Make Waldorf Chicken Salad

1. To make the dressing, add the mayonnaise, lemon juice and granulated sugar to a small mixing bowl. Whisk until well combined, and season to taste with salt and pepper. Set aside.

2. To make the salad, add the shredded chicken, diced apple, halved grapes, chopped celery and chopped walnuts to a large mixing bowl. Drizzle over the dressing, and mix until well combined and all of the salad ingredients are coated in the dressing.

3. To assemble the salad, line the base of a large salad serving plate with lettuce leaves. Top with the mixed salad, and serve.

  • 2 cups cooked chicken shredded
  • 2 red apples cored and diced
  • 1 ½ cups halved grapes
  • 1 cup chopped celery
  • ¾ cup roughly chopped walnuts
  • Lettuce leaves for serving

Dressing

  • 1 cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 tsp granulated sugar
  • Salt and pepper to taste

Instructions
 

  • To make the dressing, add the mayonnaise, lemon juice and granulated sugar to a small mixing bowl. Whisk until well combined, and season to taste with salt and pepper. Set aside.
  • To make the salad, add the shredded chicken, diced apple, halved grapes, chopped celery and chopped walnuts to a large mixing bowl. Drizzle over the dressing, and mix until well combined and all of the salad ingredients are coated in the dressing.
  • To assemble the salad, line the base of a large salad serving plate with lettuce leaves. Top with the mixed salad, and serve.

Notes

  • The walnuts can be lightly toasted in a dry skillet over a low heat for a nuttier flavor.
  • The salad could be served without the lettuce leaves if preferred.
