Waldorf Chicken Salad
A twist on the classic Waldorf salad, this Waldorf chicken salad is a delicious blend of apples, grapes, celery, walnuts and shredded chicken. The salad is smothered in a creamy sweet mayonnaise and lemon juice dressing.

- 2 cups cooked chicken shredded
- 2 red apples cored and diced
- 1 ½ cups halved grapes
- 1 cup chopped celery
- ¾ cup roughly chopped walnuts
- Lettuce leaves for serving
Dressing
- 1 cup mayonnaise
- 1 Tbsp lemon juice
- 1 tsp granulated sugar
- Salt and pepper to taste
To make the dressing, add the mayonnaise, lemon juice and granulated sugar to a small mixing bowl. Whisk until well combined, and season to taste with salt and pepper. Set aside.
To make the salad, add the shredded chicken, diced apple, halved grapes, chopped celery and chopped walnuts to a large mixing bowl. Drizzle over the dressing, and mix until well combined and all of the salad ingredients are coated in the dressing.
To assemble the salad, line the base of a large salad serving plate with lettuce leaves. Top with the mixed salad, and serve.
- The walnuts can be lightly toasted in a dry skillet over a low heat for a nuttier flavor.
- The salad could be served without the lettuce leaves if preferred.
