Spicy Smoked Carrots Over Roasted Garlic Whipped Feta

Ingredients You’ll Need

  • 5 large carrots peeled and sliced
  • 1 tbsp olive oil
  • ½ tsp chipotle powder
  • ½ tsp sea salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder

Whipped Feta

  • 5 cloves of garlic peeled and smashed
  • 3 tbsp olive oil
  • 4 oz block cream cheese
  • 4 oz block feta cheese

How to Make Spicy Smoked Carrots Over Roasted Garlic Whipped Feta

1. Preheat your grill/smoker to 300ºF. *See notes for oven instructions.

2. Prepare the carrots. Wash, peel, and slice the carrots. Slice lengthwise into quarters. If the carrots are thick, make smaller slices.

3. In a bowl, toss the carrots with 1 tablespoon of olive oil, chipotle, salt, and smoked paprika.

4. Place the carrots on the grill/smoker and cook for 35 minutes or until roasted and slightly soft.

5. Prepare the garlic. Place 5 cloves of peeled and smashed garlic in a small ramekin with 3 tablespoons of olive oil. Place this on the grill and cook for 20 minutes or until the garlic becomes very soft.

6. Remove the garlic ramekin from the grill and allow everything to cool.

7. Make the whipped feta. When the garlic is cool, add the feta cheese, cream cheese, roasted garlic, and roasting oil in a food processor. Blend until smooth.

8. Put it together. Spread the whipped feta into the cotton of a bowl or on a large plate/serving dish. Spread the roasted carrots on top and drizzle with chili crisp and a sprinkle of feta.

Notes

  • This dish is best served and eaten the same day.
  • The whipped feta can be made ahead of time and ready for assembly in the final dish.
  • Add a little cayenne to your carrots to up the spice level.
  • The carrots and garlic can also be roasted in the oven. Place the carrots on a baking sheet. Cook at 350ºF for 20-30 minutes or until they reach your desired level of tenderness. Place 5 cloves of peeled and smashed garlic in a small ramekin with 3 tablespoons of olive oil. Cook for 20 minutes in the oven at 350ºF.
