Sloppy Joe Filling

  • 2 lbs lean ground beef browned and drained
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 small onion diced
  • 1 small green bell pepper diced
  • 2 cloves garlic minced
  • 2 cups ketchup
  • 2 Tbsp tomato paste
  • 2 Tbsp brown sugar
  • 1 Tbsp yellow mustard
  • 1 Tbsp Worcestershire sauce
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 cup sharp cheddar cheese shredded

Biscuit Topping

  • 2 boxes Cheddar Bay Biscuit Mix
  • Ingredients called for on the biscuit mix package
  • Seasoning packets included in the boxes
  • 2 Tbsp butter melted
  • Chopped parsley for garnish

Instructions
 

  • To your 6 quart slow cooker add your ground beef, salt, pepper, onion, bell pepper and garlic.
  • Stir in the ketchup, tomato paste, brown sugar, yellow mustard, Worcestershire sauce, chili powder, and smoked paprika until well combined.
  • Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  • Stir in the shredded cheddar cheese until melted.
  • Prepare the Cheddar Bay biscuit mix according to the package directions.
  • Drop large spoonfuls of the biscuit dough evenly over the sloppy joe mixture, leaving a little space between each biscuit.
  • Cover and cook on HIGH for 45–60 minutes, or until the biscuits are cooked through. (Cooking times may vary depending on your slow cooker.)
  • Brush the tops of the biscuits with the melted butter mixed with the included garlic herb seasoning packets.
  • Sprinkle with chopped parsley before serving.
