Taco Ranch Bites

These Taco Ranch Bites are a simple, crowd-pleasing appetizer made with seasoned ground beef, ranch seasoning, melty cheese, and crunchy tortilla scoop chips. Each bite is loaded with bold Tex-Mex flavor and topped with fresh tomato and cilantro for a colorful finish.

Ingredients
  

  • 1 lb ground beef
  • 2 Tbsp taco seasoning
  • 1 Tbsp ranch seasoning I use Hidden Valley Original Ranch Seasoning
  • ¼ cup water
  • 24 mini tortilla scoop chips I use Tostitos Scoops
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 small tomato diced
  • 2 Tbsp chopped fresh cilantro

Optional toppings

  • Sour cream
  • Guacamole
  • Salsa

Instructions
 

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Add taco seasoning, ranch seasoning, and water to the skillet. Stir to coat and simmer for 2–3 minutes until the mixture thickens.
  • Preheat oven to 350°F. Place tortilla scoop chips on a baking tray. Fill each with a spoonful of seasoned beef, diced tomatoes and top with shredded cheese.
  • Bake for 5–7 minutes, or until the cheese is melted and bubbly.
