Taco Ranch Bites
These Taco Ranch Bites are a simple, crowd-pleasing appetizer made with seasoned ground beef, ranch seasoning, melty cheese, and crunchy tortilla scoop chips. Each bite is loaded with bold Tex-Mex flavor and topped with fresh tomato and cilantro for a colorful finish.

- 1 lb ground beef
- 2 Tbsp taco seasoning
- 1 Tbsp ranch seasoning I use Hidden Valley Original Ranch Seasoning
- ¼ cup water
- 24 mini tortilla scoop chips I use Tostitos Scoops
- 1 cup shredded cheddar or Mexican blend cheese
- 1 small tomato diced
- 2 Tbsp chopped fresh cilantro
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Add taco seasoning, ranch seasoning, and water to the skillet. Stir to coat and simmer for 2–3 minutes until the mixture thickens.
Preheat oven to 350°F. Place tortilla scoop chips on a baking tray. Fill each with a spoonful of seasoned beef, diced tomatoes and top with shredded cheese.
Bake for 5–7 minutes, or until the cheese is melted and bubbly.
