This Slow Cooker Soy Honey Garlic Chicken is tender, flavorful, and incredibly easy to make. The chicken slowly cooks in a sweet and savory sauce made with honey, soy sauce, hoisin, and plenty of garlic, creating a delicious meal that's perfect served over rice with a sprinkle of sesame seeds and fresh scallions.
Peel the garlic cloves and grate them using a microplane or fine grater. This creates a smooth paste that blends easily into the sauce and distributes the garlic flavor throughout the dish.
Place the chicken breasts in the slow cooker. Pour in the soy sauce, honey, hoisin sauce, rice vinegar, and toasted sesame oil. Add the grated garlic, then season with the salt and black pepper. Stir everything together until the chicken is evenly coated in the sauce.
Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours. About halfway through the cooking time, flip the chicken breasts over so they cook evenly and absorb the sauce on both sides.
Once the chicken is fully cooked and tender, shred it directly in the slow cooker using two forks or a hand mixer on low speed. Stir the shredded chicken into the sauce until it's evenly coated.
Serve the chicken over cooked rice and garnish with sliced green onions and sesame seeds before serving.
