Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tbsp oil
  • ½ cup honey
  • ¼ cup fresh lime juice
  • 1 tbsp lime zest
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp chili powder
  • 2 tbsp chopped cilantro optional

Instructions
 

  • Season the chicken with salt and pepper.
  • Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly golden.
  • Transfer the chicken to the slow cooker.
  • In a bowl add honey, lime juice, lime zest, soy sauce, garlic, and chili powder. Stir to combine.
  • Pour mixture over the chicken.
  • Cover and cook on LOW for 4–6 hours or HIGH for 3–4 hours, until the chicken is tender.
  • Sprinkle with more zest and cilantro if desired.

Notes

  • Fresh lime juice adds the best flavor and gives the sauce its bright, citrusy taste.
  • For a sweeter sauce, add an extra drizzle of honey to taste.
  • Let the sauce simmer until fully thickened so it coats the chicken nicely.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze cooled leftovers for up to 2 months.
  • Reheat gently with a splash of water or chicken broth to loosen the sauce if needed.
