To the slow cooker add your ground beef, salt, pepper, onion, garlic, taco seasoning, chili powder, cumin, Rotel, diced tomatoes, tomato sauce, beef broth, black beans, pinto beans, and corn. Stir well to combine.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Pour in the heavy cream and stir until smooth.
Add the shredded cheddar cheese and stir until completely melted and creamy.
Ladle into bowls and serve with your favorite toppings.
- Freshly shredded cheese melts much better than pre-shredded cheese.
- For an even creamier soup, let it rest for 10 minutes before serving.
- If the soup becomes too thick after sitting, stir in a splash of warm beef broth.
- This soup tastes even better the next day as the flavors continue to develop.
Storage
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat gently on the stovetop or in the microwave, stirring occasionally.
- Add a splash of broth or cream if needed when reheating.
- Freeze before adding the dairy for best results, for up to 3 months. Thaw overnight in the refrigerator, reheat, then stir in the cream cheese, heavy cream, and cheddar before serving.
