Ingredients
  

  • 1 Tbsp olive oil
  • 1 lb ground beef
  • ½ cup yellow onion diced
  • ½ tsp red pepper flakes
  • 2 Tbsp tomato paste
  • 4 cloves garlic minced
  • 1 Tbsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 ½ cups beef broth
  • 1 ½ cups frozen peas and carrots
  • 1 lb shelf stable gnocchi
  • ¼ cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions
 

  • Heat the olive oil in a large sided pan over medium to high heat. Add the ground beef and diced onion along with the salt and pepper. Cook for 5-7 minutes, stirring and chopping the beef up occasionally, until the beef is cooked and the onions are translucent. Drain any excess grease if there is any.
  • Add in the red pepper flakes and tomato sauce. Cook for 1–2 minutes, stirring often, until the tomato paste darkens slightly and becomes fragrant. Add the minced garlic and dried thyme. Cook for about 30 seconds, just until the garlic is fragrant.
  • Mix in the Dijon mustard, along with the Worcestershire sauce. Pour in the beef broth and stir well, scraping up any browned bits from the bottom of the pan. Add the gnocchi and frozen peas and carrots. Stir everything together, cover the pot, and let it simmer for 4–6 minutes, stirring once or twice, until the gnocchi is tender. If the sauce becomes too thick, add a splash of additional broth or water.
  • Reduce the heat to low and stir in the heavy cream. Let it cook for another 1–2 minutes until the sauce becomes smooth and creamy. Remove the skillet from the heat and stir in the parmesan cheese until melted. Taste and season with additional salt and pepper if needed.
  • Serve warm with an extra sprinkle of parmesan and a little dried thyme on top, if desired.

Notes

  • Keep in the refrigerator for 2-3 days in an airtight container.
  • Browning the ground beef before breaking it apart adds extra flavor.
  • If your skillet starts looking dry while the gnocchi cooks, simply stir in a little more broth.
  • Freshly grated parmesan melts much smoother than pre-shredded cheese.
  • You can use frozen diced onions for an easier prep.
